Wild Rice Salad Recipe:

A simple and flavorful quick rice salad. Wild rice combines with mushrooms, cilantro and a simple dressing to create this easy salad.

It can be a flavorful side dish or the main event. See the easy menu planner below for making quick meals from this wild rice salad recipe.


2-3 servings


You will need 5 ingredients:

- Wild Rice
- Baby Bella or White Mushrooms
- Fresh Cilantro
- Olive Oil
- Rice Vinegar



Make Ahead for this Salad:

- Prepare rice according to package directions
and measure out 3 cups

Ingredients:

wild rice – 3 cups cooked

baby bella or white button mushrooms – 1 cup cleaned and thinly sliced

fresh cilantro – 1 tbsp (or to taste) finely chopped

olive oil – 1 tbsp

rice vinegar – 2 tbsp

1. Combine the rice, mushrooms and cilantro in a mixing bowl.

2. In a small bowl or jar with lid, whisk or shake the olive oil and vinegar together until completely combine.

3. Add dressing to the salad ingredients and toss well.

4. Allow salad to marinate for an hour before serving. Taste rice salad before serving and add more vinegar and/or oil if necessary.
