Tofu Salad Recipe
with Spicy Peanut Dressing:


A delicious quick tofu salad recipe that’s perfect for vegetarians too.
Seasoned tofu is combined with crunchy broccoli and cauliflower, flavorful arugula and rich tasting pine nuts and then topped off with a spicy peanut dressing.

The easy ingredient exchanges and menu planner below will give you a variety of ways to create quick meals from this easy tofu salad recipe.

2-3 servings (as a main dish)




You will need 5 ingredients:

- Packaged Seasoned Tofu
- Packaged Broccoli and Cauliflower Florets
- Arugula
- Pine Nuts
- Bottled Peanut Sauce



Make Ahead for this Salad:

- If you don’t like raw broccoli or cauliflower,
you may steam them for just a few minutes
and then immerse in cold water. Drain and cut into bite-size
pieces for the salad.

Ingredients:

package seasoned tofu – 1 1/2 cups cut into cubes
(choose your favorite flavor)

** packaged broccoli/cauliflower florets – 1 cup washed,
drained and cut into bite-size pieces

arugula – 3 cups washed and patted dry

pine nuts – 1 to 2 tbsp

bottled peanut sauce – 1/4 to 1/2 cup



** Leftover Idea - Quick Pasta Salad: With the remaining broccoli and cauliflower mixture, simply use raw or steam lightly and add to some cooked pasta, tossing everything with your favorite dressing. Quick and delicious.

1. In a mixing bowl, combine the tofu, broccoli and cauliflower, arugula, and pine nuts.

2. Drizzle the peanut sauce over tofu salad and toss well. Adjust the quantity to your preference.
