A unique blend of flavors combining chicken, hummus, crunchy carrots, spicy scallions and sweet cranberries. Just a few ingredients create this delicious chicken salad.

You will need 5 ingredients:

- Chicken
- Hummus
- Carrots
- Scallions
- Sweetened Dried Cranberries




Make Ahead for this Salad:

- If cooking your own chicken, prepare
as desired, cool, and dice 2 cups

Ingredients:

chicken – 2 cups cooked, cooled and diced

prepared hummus – 1/2 cup or to taste

carrots – 1 cup shredded
Quick Tip: use packaged pre-shredded carrots from the supermarket.

scallions – 1/2 cup diced

sweetened dried cranberries – 1/4 cup roughly chopped



Vegetarian Option: Instead of chicken, substitute tempeh or flavored tofu
