Summer Salad Recipe:

This beautiful summer salad recipe is as good to eat as it is to look at. A sweet combination of grapes, peaches and melon with crispy cucumber and the spicy tang of red onion brings the peak flavors of summer together in this seasonal salad that is easy and delicious. It’s the perfect quick and light meal on a hot summer day.

Serves 2


You will need 5 ingredients:

- Red Grapes
- Peaches
- Cantaloupe
- Cucumber
- Red Onions

Ingredients:

red grapes – 1 cup (each grape cut in half)

peaches – 1 cup cut into bite size pieces

**cantaloupe – 1 cup cubed melon

cucumber – 1/2 cup peeled and diced

red onion – 1/2 cup finely diced


**Quick Tip: When choosing a cantaloupe, pick one that is heavy for its size, has no soft spots (except for the stem end) or bruising. The best way to tell if the melon is ripe is to smell the stem end. If you scrape it a little with your fingernail you can really smell the melon. It should have a strong, sweet cantaloupe smell when truly ripe.

1. To prepare summer salad, cut all the fruit on a cutting board, be sure to capture all the juice. This will be your dressing, so you want to be sure you don’t lose any of it.

2. Place the fruit and all the juices into a mixing bowl.

3. Add the cucumber and onion and toss all the ingredients well to coat.

You may want to let this fruit salad sit for a while before serving to allow all the flavors to mingle and develop.

Quick Meals - Menu Planner:

** Serve fruit salad in cut glass bowls with a dollop of crème fraiche on top.

** You could also serve this easy fruit salad in avocado halves that have been sprinkled with lemon juice along with whole grain crackers and mini pretzels sticks on the side.

** Serve summer salad on a bed of fresh baby spinach leaves and sprinkle sliced almonds on top of each salad. Serve along with cheese toasts.

** Another easy way to serve this seasonal salad is alternately layered with plain yogurt in parfait glasses with honey drizzled on top of each parfait.

** You may also want to serve this simple fruit salad with an easy pasta salad.
