Smoky Pepper Salsa



This smoky pepper salsa is a great blend of peppers and zucchini, avocado and lime.
A little bit smoky, crunchy, creamy and citrusy all at the same time.

A nice flavorful quick salsa recipe that works well on its own but also has such a deep flavor that it can be used in a wide variety of ways to enhance many dishes.

Yield: Approx: 2 1/2 to 3 cups





You will need 4 ingredients:

- Bottled Roasted Red Peppers
- Zucchini
- Avocado
- Fresh Squeezed Lime Juice

Ingredients:

bottled roasted red peppers – 1 cup medium dice
(using bottled roasted peppers is quick and easy)

zucchini – 1 cup medium dice

1 avocado – stone removed, peeled and
diced into medium sized pieces

lime juice – 1 tbsp freshly squeezed

salt and pepper – to taste

In a bowl, combine all the ingredients, adjusting the salt and pepper to taste.

Note: Allow to marinate for at least an hour before serving.

Easy Salsa Servings Suggestions for Quick Meals:

Dip:

** Serve salsa with your favorite chips or cut up raw vegetables like: celery sticks, jicama sticks, thick cucumber slices or peeled baby carrots.

Salad Dressing:

** Serve salsa as a salad dressing over your favorite green salad or a seafood salad dressing.

Seafood or Chicken Topper:

** Serve salsa as a topping for any mild fish like: halibut, cod or tilapia or over grilled or broiled chicken.

Vegetable or Wrap Idea:

** Serve salsa mixed with diced cheese chunks stuffed into tomato or green pepper cups or rolled up in a wrap style sandwich with sprouts and a little sour cream.
