Shrimp Pasta Salad Recipe:

You will enjoy the simple flavors in this shrimp pasta salad recipe. It’s quick, easy and loaded with great taste from bow-tie pasta, sweet shrimp, marinated artichoke hearts, lemon zest and cilantro.


This is not only a great pasta salad but an easy and delicious shrimp recipe as well. The combination of the lemon zest with the lemon juice really works well with the shrimp and adds a nice accent to the salad.

There are serving suggestions and additions listed below to let your imagination create a unique salad every time. With just a few ingredients added to this easy recipe you can give all the variations a try and enjoy this shrimp pasta salad recipe over and over.

You will need 5 ingredients:

- Farfalle (Bow-tie) Pasta
- Shrimp
- Bottled Marinated Artichoke Hearts (for the chokes and oil)
- Lemon (for lemon juice and lemon zest)
- Fresh Cilantro


Make Ahead for this Salad:

- If cooking your own shrimp,
prepare 1 cup (or more if you prefer)

- You may prepare the pasta ahead of time if you prefer

Ingredients:

cooked farfalle (bow-tie) pasta – 3 cups

cooked shrimp – 1 cup (or desired amount – more if you
really like shrimp)
(cut shrimp into small chunks)

bottled marinated artichoke hearts – 1/2 cup chopped

oil from the marinated artichoke hearts – 1 tbsp

lemon zest – 1 tsp or to taste

fresh squeezed lemon juice – 2 tbsp

fresh cilantro – 2 tbsp chopped

1. Cook pasta according to package directions, drain and measure out 3 cups and put into a large mixing bowl.

2. If cooking your own shrimp, prepare as desired, cut into chunks and add 1 cup (or more if you desire) to the mixing bowl.

3. If using prepared store-bought shrimp, just cut into chunks and add to the mixing bowl.

4. Add the cut up artichoke hearts and toss all ingredients together.

5. In a small bowl, combine the artichoke oil, lemon zest, lemon juice and cilantro. Whisk together until well combined.

6. Add the dressing to the pasta and shrimp and toss to combine completely.
