Red Rice and Olive Salad:

A quick and easy salad that’s so simple and delicious to prepare. A great blend of flavors and easy preparation makes it a recipe to make all the time.

Use the menu planner and the ingredient exchanges and additions to create a variety of quick and delicious meals.


3-4 servings



You will need 4 ingredients:

- Brown Rice
- Prepared Salsa
- Black Olives
- Fresh Parsley



Make Ahead for this Salad:

- Prepare rice according to package directions,
and measure out 4 cups - See the Quick Tip
below to speed up preparation time.

Ingredients:

brown rice – 4 cups cooked

Quick Tip: use boil-in-the-bag quick cooking
brown rice to speed up preparation time.


prepared store bought salsa – 1/2 to 3/4 cup
(choose your favorite kind of salsa)

black olives – 1/4 cup roughly chopped

fresh parsley – 1/4 cup finely chopped

In a mixing bowl, combine all the salad ingredients and stir well to combine.

Quick Meals - Menu Planner:

** Serve rice salad with stir-fried chicken and mushrooms along with a side dish of steamed broccoli w/grated parmesan on top.

** This quick salad goes well with broiled chicken and roasted vegetables from the deli as a side dish.

** Serve our easy rice salad on a bed of steamed cabbage with a simple salad of lettuce greens tossed with an olive oil vinaigrette.

Try these simple ingredient exchanges for a change of taste every time you prepare this salad.

* Instead of Black Olives: try Green Olives or a Combination of Olives and Capers (use 1/8 cup of each)

* Instead of Parsley: try Cilantro or Scallions
