Welcome to our Quick Salads of the Month page. Here you will find a constantly changing collection of quick salads from chicken and seafood to fruit and vegetables. You will also see pasta salads, grain salads, potato salads and more. Our new salads for August are here. These are fast, flavorful and easy recipes. Throughout each month, salads will be added and as the months change this page will change too, so you will always find something new, fresh and delicious to add to your meals. As always, each recipe will use just a few ingredients and quick and simple preparation. Come back often to take a look at all the new salads and meal ideas for every month of the year.
AUGUST QUICK SALADS
Each recipe makes 2-3 servings.
Summer Melon Salad 1 cup cantaloupe (cubed) Step 1: Combine all the salad ingredients in a bowl and toss well. Optional Additions: Try adding some walnut pieces for a little added flavor and crunch. - For a simple idea, serve this quick salad in parfait glasses with toasted cinnamon bread slices or cinnamon graham crackers on the side. - You could also serve this simple fruit salad on salad greens with whole grain crackers.
Salmon Salad with Mango Chutney 6 oz salmon (cooked and flaked)
Step 1: In a mixing bowl, combine all the salad ingredients and toss well. Adjust the chutney if needed. Optional Additions: Try adding the following to add a little variety to this easy salad: cubed avocado or cooked and cubed sweet potato. - Serve this easy salmon salad on a bed of crisp romaine lettuce with a side of cooked basmati rice flavored with soy sauce and lime juice. - You could also serve this salad in cooked and cooled puff pastry shells with mandarin orange slices on the side for a quick and easy meal.
Sweet Pepper Black Bean Salad 1 (15oz) can black beans (rinsed and drained) Step 1: In a mixing bowl, combine the beans, fennel, pepper and olives. - Serve this quick bean salad with baked fish and a side of your favorite steamed vegetables. You could even serve it over the fish, as well. - You could also serve this salad with warm cornbread or corn muffins.
Broccoli and Sweet Corn Salad
2 cups broccoli florets (lightly steamed and cooled) Step 1: Place the broccoli, corn, onion and sunflower kernels in a bowl. Optional Additions: Try adding cubes of chayote squash or mango cubes. - Serve this quick broccoli salad on a bed of mixed salad greens with warm rolls on the side. - Make a quick meal by serving this salad on top of cooked whole grain pasta along with garlic bread.
Potato Leek Salad with Walnuts
2 cups fingerling potatoes (or any small variety) (cubed, cooked until tender and cooled)
Step 1: In a mixing bowl, combine the all the ingredients and toss well. Adjust oil and vinegar if needed. Optional Additions: For a little extra flavor try adding some oil-cured olives or a fresh grating of lemon zest.
- For a really simple meal, serve this quick potato salad with grilled or baked chicken and a side of tomatoes and cucumbers tossed in a little olive oil and lemon pepper.
Quick Turkey Salad
2 cups cooked turkey (cubed) Step 1: In a mixing bowl, combine all the salad ingredients and toss well. Salt and pepper to taste. Optional Additions: Try adding some dried cranberries for a little extra sweetness or some walnut pieces for a little more depth of flavor.
- A simple way to serve this salad is on a bed of cooked and cooled couscous or quinoa. You could also just place salad on a bed of salad greens and serve the cooked grain on the side seasoned with a little soy sauce and lemon juice. - This quick and easy salad also makes a great pita bread filling. Just cut pita in half and fill with salad and serve with cut up carrot and celery sticks and apple slices.
Shrimp and Brown Rice Salad
1 1/2 cups cooked, medium to large shrimp (remove shells and cut shrimp into chunks) Step 1: In a mixing bowl, combine the shrimp, rice, carrots and scallion. Optional Additions: Try adding some chopped roasted red pepper or add a little basil pesto to the dressing for a richer flavor. - For a quick, easy and light meal, serve this quick salad on a bed of cooked rice noodles with steamed snow peas and mushrooms on the side. - For another simple idea, use this flavorful salad as a filling in steamed cabbage leaves by simply placing a mound of salad in a steamed and cooled cabbage leaf, fold up the bottom edge, then fold in the sides of the leaf and roll up.
Pasta Salad with Arugula and Pine Nuts
2 cups cooked rotini pasta or other small shaped pasta Step 1: In a mixing bowl, combine the pasta, arugula, pepper and nuts. Optional Additions: For a little crunch and sweetness try adding some cubes of jicama or try adding some cooked garbanzo beans for a little more texture and flavor.
- Serve this easy pasta salad with warm slices of focaccia bread. - For a quick and light meal just serve up this salad in chilled bowls with a side of avocado and tomato slices seasoned with lemon juice and fresh ground pepper.
Fresh Blueberry Salad
1 cup blueberries Step 1: In a mixing bowl, combine all the salad ingredients and toss well. - Serve this easy fruit salad on salad greens with warm bread sticks. - For a quick and light meal just serve up this salad over thin slices of avocado.
Zucchini Tomato Salad
2 cups plum tomatoes (cut into chunks) Step 1: In a mixing bowl, combine all the ingredients and toss well. Season with salt and pepper to taste. Optional Additions: To make this a little more of a meal try adding some grilled chicken or for a vegetarian salad add some baked tofu (choose your favorite flavor). - Serve this quick tomato salad with whole grain bread spread with low-fat cream cheese. - For a quick and light meal just serve up this salad along with cooked spinach linguine dressed with lemon juice and olive oil.
Simple Bean Salad
1(15oz) can of kidney beans (rinsed and drained)
Step 1: In a mixing bowl, combine all salad ingredients and toss well. Optional Additions: For a little burst of extra flavor try adding some fresh basil or some crumbled feta cheese.
- Serve this quick bean salad on mixed salad greens with grilled portobellos and warm rolls on the side. - For a simple meal serve up this salad on cooked, cold soba noodles with baked sweet potato chips.
Artichoke Potato Salad with Creamy Bacon Dressing 2 cups red potatoes (cubed, cooked until tender, cooled) Step 1: In a mixing bowl, combine the potatoes, artichoke hearts, snow peas and red onion. - Serve this flavorful potato salad with grilled hamburgers. - Another quick serving idea is to place salad on a bed of spinach leaves and serve along with grilled tuna steaks
Pasta Salad with Chick Peas and Tomatoes 2 cups cooked penne pasta
Step 1: Place all the salad ingredients in a mixing bowl and toss well to combine. Adjust the lemon juice and/or olive oil if desired. Optional Additions: Try adding some cubes of provolone cheese or black olives for added flavor. - Serve this quick pasta salad in colorful bowls with a side of artichoke hearts sprinkled with grated parmesan cheese and cheese breadsticks. - Serve salad on a bed of romaine lettuce with warm garlic bread.
Cold Ham and Apple Salad
2 cups cooked (sodium-reduced)ham (cubed) Step 1: In a mixing bowl, combine all the salad ingredients and toss to combine well. Optional Additions: Try adding some cubes of Swiss cheese for an extra layer of flavor. - Serve this delicious ham salad rolled inside a soft tortilla shell with pickles on side. - Another quick serving idea is to scoop salad onto mixed salad greens and serve with a side of warm mashed sweet potatoes seasoned with a little butter and grated nutmeg.
