Quick Artichoke Blue Cheese Salad Recipe

You will need 7 ingredients:
- Napa Cabbage - Balsamic Vinaigrette Dressing - Jarred Marinated Artichoke Hearts - Cucumber - Pitted Black or Green Olives - Capers - Blue Cheese

Ingredients:
napa cabbage - 3 cups shredded
balsamic vinaigrette dressing - 1/4 to 1/2 cup
jarred marinated artichoke hearts - 1 1/2 cups
cucumber - 1 cup finely diced
pitted black or green olives - 1/2 cup chopped medium dice
capers - 1/4 cup
blue cheese - 4 oz crumbled

1. In a mixing bowl, combine the cabbage and the dressing. With your hands, knead the cabbage and the dressing together. This will allow the cabbage to break down and the dressing to infuse the cabbage. Knead for a minute or so and then allow to sit for ten minutes.
2. In the meantime, in another bowl combine the rest of the salad ingredients and toss to combine well.
3. When ready, add the cabbage to the second bowl and toss again to combine everything completely.
Note: If more dressing is needed, you can either add a little more of the vinaigrette or the oil from the jar of the marinated artichokes, or a little of both.
