Potato Salad Recipe

You will need 5 ingredients:
- Red Skinned Potatoes - Scallions - Oil-Cured Olives - Dried Oregano - Bottled French Dressing
Make Ahead for this Salad:
- Boil potatoes, allow to cool and dice into medium pieces

Ingredients:
red skinned potatoes 3 cups cooked and medium dice (this is approximately 3 medium size potatoes)
scallions 1/2 cup finely chopped
oil-cured olives 1/2 cup finely chopped
dried oregano 1 tsp
all natural bottled French dressing 1/2 cup or to desired moistness

1. Place the cooked potatoes and scallions in a mixing bowl.
2. In a smaller bowl, combine the olives, oregano and French dressing and whisk together until completely combined. As you add the oregano to the bowl, crumble it between your fingers to release the oils.
3. Add dressing to the potatoes and toss well.
Note: This easy potato salad may be served at room temperature or as a cold potato salad too.
