Pineapple Guacamole Shrimp Salad:


A four ingredient seafood salad recipe. Sweet shrimp and pineapple with guacamole and red bell peppers combine to make a quick and delicious shrimp salad in minutes.

The easy menu planner below gives quick meal ideas for any day of the week.


2-3 servings (as a main meal)



You will need 4 ingredients:

- Shrimp (pre-cooked ready to eat)
- Pineapple – fresh or canned
- Sweet Red Peppers
- Prepared Frozen or Refrigerated Guacamole


Make Ahead for this Salad:

- If using frozen guacamole, defrost in advance
of making salad

Ingredients:

pre-cooked ready to eat shrimp – 2 cups
cut into bite-size chunks

pineapple chunks – fresh or canned(drained)
1 cup

sweet red peppers – 1/2 cup medium dice

prepared frozen or refrigerated guacamole – 3/4 cup or
to desired moistness

1. In a mixing bowl, combine the shrimp, pineapple and red pepper.

2. Add the guacamole and combine well, adjusting to suit your own taste.
