This quick chicken salad recipe is crunchy and citrusy. Crisp cabbage, toasted sesame oil and tangy lime juice combine to make a fresh and flavorful chicken salad.
Our Oriental chicken salad recipe can also be easily adapted for the vegetarian by substituting smoked tofu or even tempeh in place of the chicken.

You will need 7 ingredients:
- Chicken
- Napa Cabbage
- Scallions
- Sweet Red Peppers
- Fresh Lime Juice
- Toasted Sesame Oil
- Sesame Seeds
Make Ahead for this Salad:
- Cook the chicken as you desire, cool and cut up 2 cups into cubes

Ingredients:
* cooked chicken – 2 cups cubed (grilled, broiled, or baked chicken may be used)
napa cabbage – 2 cups shredded
scallions – 1/2 cup minced
sweet red peppers – 1/2 cup diced
fresh lime juice – 2 tbsp squeezed
toasted sesame oil – 1 tbsp
sesame seeds – for garnish
* Vegetarian Option: Use smoked tofu or tempeh in place of the chicken.

1. In a mixing bowl, combine the chicken and the vegetables.
2. In a small mixing bowl or jar with tight fitting lid, combine the lime juice and sesame oil, whisking or shaking to combine.
3. Add dressing to the chicken salad and toss well.
Note: Allow salad to marinate for at least 30 minutes before serving. Toss salad again before serving and garnish each serving with a sprinkling of sesame seeds.
