Marinated Lettuce Salad:

A quick and flavorful lettuce salad with seasoned tomatoes, cucumbers, peppers, onion, and goat cheese. The longer the salad is allowed to marinate the more concentrated the flavors become. It's a rich tasting lettuce salad with just a few ingredients and easy preparation.

Try serving this marinated salad with grilled chicken. See our easy chicken salad idea below along with the other quick meal ideas.

2-3 servings

Ingredients:

lettuce greens – 6 cups
(washed, dried and torn into small pieces)

Italian style canned diced tomatoes – 1 (14.5 oz) can – drained

cucumbers – 1 cup diced

bottled jalapeno pepper slices – 1 tbsp (or to taste) – roughly chopped

red onion – 1 tbsp diced

* fresh goat cheese – 1/4 cup crumbled

*Quick Tip to Reduce Fat: Use a low-fat or fat free goat cheese when preparing salad.

1. In a mixing bowl, combine all the ingredients and mix thoroughly.

2. Allow salad to marinate for at least one hour, preferably more, tossing occasionally.

The lettuce will wilt down the longer it marinates.

If you prefer, you can substitute shredded cabbage for half the lettuce amount. This will give the salad a bit more crunch.
