Green Goddess Salad Dressing:


Using just a few ingredients, this easy to make salad dressing is rich and creamy. Avocado and mayonnaise are added to fresh parsley, lemon juice and garlic to create this delicious and quick dressing.

Using the quick salad ideas and serving suggestions below you can use this green goddess salad dressing in a variety of ways.



Yield: Approximately 3/4 cup



You will need 5 ingredients:

- Avocado
- Mayonnaise
- Fresh Parsley
- Fresh Garlic
- Fresh Squeezed Lemon Juice

Ingredients:

ripe avocado – 1/4 cup diced

* mayonnaise - 1/2 cup

fresh parsley – 1/4 cup

fresh garlic – 1 clove – cut into a few pieces

fresh squeezed lemon juice – 1 to 2 tbsp or to taste


* Quick Tip to Lower Fat: use low-fat or nonfat mayonnaise

Place all ingredients in a blender or food processor and process until smooth, stopping to taste and adding extra lemon juice if desired.

Note: Make sure that your blender or food processor is moving the ingredients freely and add a little water if needed to keep ingredients moving and blending properly.
