Ginger Salad Dressing


This salad dressing is light and fresh and a breeze to make. Lime juice and zest with the great clean taste of ginger create an easy and delicious dressing.

Yield: Approximately 1/2 cup




You will need 5 ingredients:

- Peanut Oil
- Celery
- Fresh Grated Ginger
- Fresh Squeezed Lime Juice
- Lime Zest

Ingredients:

peanut oil – 2 tbsp

celery – 2 tbsp finely diced

fresh grated ginger – 1/8 to 1/4 tsp

fresh squeezed lime juice – 2 tbsp

lime zest – to taste

In a mixing bowl, whisk all the ingredients together until well combined. You may also place the ingredients in a jar with a lid and shake to combine.

Quick Meal Ideas:

Pasta Salad:

** Dress up any cooked oriental style noodles (such as ramen, soba or udon) with this quick dressing. Add flavored tofu, grilled chicken or steak and toss all together. Serve with a side of your favorite steamed vegetables.

Ginger Tuna Salad:

** Using canned tuna, drain and add chopped sweet red peppers and water chestnuts. Toss with ginger dressing, to desired moistness, and mound into avocado halves or use as a filling for a wrap sandwich with your favorite chips on the side.
