Garbanzo Bean Salad:

Four simple and flavorful ingredients create this quick and easy bean salad. It’s a fast salad recipe you can use any time.

2-3 servings

You will need 4 ingredients:


- Garbanzo Beans – 1 (14.5oz) can
- Mandarin Oranges – 1 (10.5oz) can
- Fresh Parsley
- Low-Fat Vinaigrette

Ingredients:

canned garbanzo beans – 1 (14.5oz) can
(rinsed and drained)

canned mandarin oranges – 1 (10.5oz) can
(drained (reserve liquid for dressing))

fresh parsley – 1/2 cup coarsely chopped
(wash and pat dry before chopping)

low-fat vinaigrette – to desired moistness
(choose your favorite natural store-bought brand)
(you may also add a little of the reserved
mandarin orange juice to dress the salad)

1. In a mixing bowl, combine the beans, orange segments and the parsley.

2. Drizzle on the vinaigrette and the reserved juice from the oranges, if using. Use as much or as little as you desire to moisten the salad.

3. Allow salad to marinate in the refrigerator for at least an hour to develop the flavors.

Main Meal Ideas:

** Serve bean salad recipe with warm rice and a light dessert.

Lemony Rice with Garbanzo Bean Salad


                                   Lemon Rice

2 cups water               In a medium saucepan, combine the
                           water, rice and lemon peel.  Bring
1 cup brown rice           to a boil.  Lower heat to a simmer,
 rinsed under              cover and cook for 30 to 40 minutes
 cold water                until water is gone.
 and drained
                           Allow rice to stand in covered pan
2-3 pieces of              for 10 minutes.  Remove lemon peel
 lemon peel                and fluff rice with a fork.

                           Serve rice along with Garbanzo Bean 
                           Salad.
                                               
                                                 Serves 2-3


                                   For Dessert

Vanilla ice                In dessert bowls, serve one or
 cream                     two scoops of vanilla ice cream
                           with a sprinkling of brown sugar
Brown sugar                and sliced almonds on top.

Sliced almonds 
 



** You could also serve this bean salad recipe with baked or broiled chicken and baked sweet potato fries on the side.

Light Meal Ideas:

** For a quick lunch or dinner, serve gabanzo bean salad on washed and dried spinach leaves with goat cheese spread on rye crackers on the side.

** Try serving this quick salad scooped into artichoke bottoms with warm French bread slices with a cream cheese spread on the side.
