A spicy and flavorful quick creole egg salad recipe. Using just a few ingredients that include, hard boiled eggs, red onions, green peppers, celery, mayonnaise and a spicy creole seasoning, this quick salad is easy to make, delicious and also a nice change on the usual egg salad sandwich recipe.

The simple ingredient exchanges and menu planner will give you several ideas to make a variety of quick meals from our Creole Egg Salad Recipe.

You will need 6 ingredients:

- Eggs - Hard Boiled
- Red Onions
- Green Peppers
- Celery
- Mayonnaise
- Creole Seasoning




Make Ahead for this Salad:

- Hard boil 4 eggs, cool and remove shells

Ingredients:

shelled hard boiled eggs - 4 eggs chopped

red onion - 2 tbsp finely diced

green pepper - 1/2 cup diced

celery - 1/3 cup thinly sliced

mayonnaise - 1/2 cup or to desired moistness
Lower the Fat: use a low-fat or fat-free mayonnaise

creole seasoning - 1/4 tsp (or to taste)

1. In a mixing bowl, combine the hard boiled eggs, onion, green pepper and celery.

2. In another bowl, combine the mayonnaise and the creole seasoning.

3. Add mayonnaise to the egg salad ingredients, adjusting the mayonnaise and the seasoning to suit your taste.
