Creamy Tomato
Salsa Recipe



Creamy Tomato Salsa Recipe is a quick and easy salsa with tomatoes, garlic, cilantro, onions and the smooth creaminess of yogurt. It's simple and delicious.

Try it with rice or use it to make lettuce wraps. See the easy serving suggestions below.



Yield: Approximately 2 cups





You will need 5 ingredients:

- Tomatoes
- Garlic
- Fresh Cilantro
- Red Onion
- Plain Yogurt

Ingredients:

tomatoes – 2 cups diced

fresh garlic – 1 clove minced

fresh cilantro – 1/4 cup chopped

red onion – 1/2 cup finely chopped

plain yogurt – 1/2 cup

In a mixing bowl, toss all the salsa ingredients until completely combined.

Note: Allow to marinate for at least on hour.

Easy Meal Idea:

** Rice and Bean Burritos:

Creamy Rice and Bean Burritos


4 (8-inch) tortillas         Rinse and drain beans.  Heat the
                             beans and rice in a pan until
1 (15oz) can of              heated through, about 2 minutes.
 kidney beans                Season with salt and pepper.

1 cup cooked rice            Layer tortillas with bean and
                             rice mixture, then the
Shredded lettuce             lettuce, cheese and finally the
                             creamy salsa.
Shredded cheese
 (your choice)               Serve with your favorite chips.

                                                 Serves 4



Quick Pasta Meal:

** Serve this creamy salsa recipe over hot pasta, such as linguine, spaghetti or angel hair, with freshly grated parmesan cheese over top and warm garlic bread or rolls.


Light Meal or Snack Idea:

** Spicy Black Bean Wraps:

Spicy Black Bean Lettuce Wraps


1 (15oz) can of          Rinse and drain beans.  Divide the
 black beans             beans among the lettuce leaves, placing
                         the beans in a line down the center
4 large lettuce leaves   each leaf.  Place the creamy salsa
 (washed and dried)      over the top of the beans.  
               
                         Fold the tip end of each lettuce leaf
                         over the beans, then fold each side
                         over to the center.

                         Top each wrap with grated cheese if
                         you like.  Serve with tortilla chips
                         or sweet potato chips.

                                                   Serves 4
