packaged shredded carrots 1 cup
celery 1/4 cup diced
onion 1/4 cup diced
lemon zest 1/2 tsp
fresh squeezed lemon juice 1 to 2 tbsp
Quick Tip: You can pulse the carrots, celery and onion in a food processor until you reach the consistency you desire and transfer to a mixing bowl.

crabmeat 2 cups cooked (use packaged crabmeat and cook if needed or use packaged imitation crabmeat and separate into pieces)
seedless cucumber 1 cup cubed

2. To the vegetables, add the lemon juice and zest. Toss well to combine. Taste and adjust lemon juice if needed.
