Corn and Cabbage Salad Recipe:

A quick salad recipe with simple ingredients and great taste. Sweet corn and crunchy
cabbage combine with pimiento-stuffed olives, hard boiled eggs and a simple mayonnaise dressing. A flavorful quick salad that’s easy to make and delicious any time.

Quick and easy meals can be made using the menu planner below. Also use the simple ingredient exchanges to add variety to this quick salad recipe.



2-3 servings (as a main dish)




You will need 5 ingredients:

- Packaged Shredded Cabbage
- Fresh Corn or Frozen Kernels
- Pimiento-Stuffed Olives
- Hard-Boiled Egg
- Mayonnaise



Make Ahead for this Salad:

- If using frozen corn, thaw and drain ahead of time.

- Hard-boil egg

Ingredients:

packaged shredded cabbage – 2 cups

fresh corn or frozen corn kernels – 1 cup
(if using frozen - thaw and drain)

pimiento-stuffed olives – 1/4 cup diced

hard-boiled egg – (1) roughly chopped

* mayonnaise – 1/2 cup or to desired moistness

*Quick Tip to Lower Fat: use a low-fat or nonfat mayonnaise



Herb Option: Try adding about 1/8 to 1/4 tsp of cumin or dill to this recipe for added flavor

1. In a mixing bowl, combine all the ingredients and mix together well.

2. Adjust mayonnaise to desired moistness.
