A great cold pasta salad recipe that is so easy to make even the kids
can get in on the fun
. A little spicy from salsa and a little creamy from cheese, it's a taste that can't be beat.

Using only four ingredients, it is quick and easy and the perfect cold pasta salad anytime.

2-3 servings


You will need 4 ingredients:

- Rotini Pasta
- Frozen Vegetable Mix (your choice)
- Salsa (your choice)
- Fresh Mozzarrella Cheese


Make Ahead for this Salad:

- Prepare the pasta according
to package directions

- Thaw and drain the frozen
vegetable mix you have chosen

Ingredients:

dried rotini pasta - 3 cups cooked

frozen vegetable mix - 2 cups thawed
(choose your favorite vegetable mix)

*salsa - 1 cup
(choose the salsa you like the best)

mozzarella - 1 cup cut into cubes


*Quick Tip: Instead of using your favorite salsa, try our sunflower tomato salsa for a change of taste.

1. Prepare the pasta according to package directions. Drain and put the three cups into a large mixing bowl.

2. After thawing the frozen vegetables allow them to drain in a strainer until the water is gone then add to the mixing bowl along with the salsa and the mozzarella cheese.

3. Toss all the ingredients together mixing well.

4. Chill the salad in the refrigerator for at least an hour.

Note: You may have to add a little more salsa to the salad after chilling. Adjust to the desired moistness.
