Chopped Salad Recipe:

This quick salad recipe really delivers on flavor and speed. A few ingredients including broccoli, cauliflower, water chestnuts and an oil and vinegar dressing and you have one of the easiest and most versatile vegetable salads.

To make more servings, simply double the ingredients. It’s easy to add on to this quick salad so you can keep it simple or make it as complex as you like.

You will need 6 ingredients:

- Broccoli
- Cauliflower
- Celery
- Water Chestnuts
- Red Onion
* - Bottled Oil and Vinegar Dressing

Ingredients:

**broccoli – 1 cup cut into small pieces

**cauliflower – 1 cup cut into small pieces

**celery – 1/2 cup cut into small dice

sliced water chestnuts – 1/2 cup (slice each piece in half)

**red onion – 1/4 cup diced

*bottled all natural oil and vinegar dressing – 1/2 cup or to desired moistness


* Instead of a bottled dressing try our

Greek salad dressing.

**Quick Tip: To speed up preparation, the broccoli, cauliflower, celery and red onion may be processed in a food processor to desired consistency.

1. In a mixing bowl, combine the broccoli, cauliflower, celery, water chestnuts and red onion.

2. Pour dressing over all and toss to coat well, adding more dressing if needed.

3. Allow chopped salad to marinate for at least an hour or two for the flavors to develop before serving.
