You will need 7 ingredients:

- Chicken (grilled or smoked)
- Mung Bean Sprouts
- Snow Peas (fresh or frozen)
- Fresh Cilantro
- Fresh Squeezed Lemon Juice
- Soy Sauce
- Toasted Sesame Oil


Make Ahead for this Salad:

- If cooking your own chicken,
prepare as desired, cool and
cut 3 cups into cubes

- If using frozen snow peas, thaw and drain

Ingredients:

grilled or smoked chicken – 3 cups cubed

fresh mung bean sprouts – 1 cup (be sure to rinse before using)

snow peas (fresh or frozen and thawed) – 1 cup

fresh cilantro – 1/2 cup chopped

fresh squeezed lemon juice – 1 tbsp

soy sauce or tamari – 1 tbsp

toasted sesame oil – 1 tbsp

1. In a mixing bowl, combine the chicken, vegetables and the cilantro.

2. In a small bowl, combine the lemon juice, **soy sauce or tamari and the sesame oil, whisking to combine.

**Quick Tip: To reduce the sodium, use a sodium reduced soy sauce or tamari.

3. Pour dressing over the chicken salad ingredients and toss to combine well.
