Chicken Salad with Olive Dressing:

A quick chicken salad with the full rich flavor of oil-cured olives and crisp vegetables.
Simple to make and delicious.

You will need 5 ingredients:
- Grilled or Roasted Chicken
- Oil-Cured Olives
- Oil and Vinegar Dressing
- Celery
- Cucumber



Make Ahead for this Salad:
- If preparing your own chicken, grill
or roast and cube 2 cups

Ingredients:

chicken – 2 cups grilled or roasted cut into cubes

oil-cured olives – 10 olives finely diced
(you can find these in the ethnic aisle of the supermarket)

oil and vinegar dressing – 2 to 3 tbsp of your
favorite natural store bought brand

celery – 1 cup diced

cucumber – 1/2 cup finely diced

1. In a mixing bowl, combine the chicken, olives and the oil and vinegar dressing. Refrigerate for an hour, tossing occasionally.

2. Add celery and cucumber after one hour and toss again to combine completely.
