Chicken Salad with Grapes:

This quick chicken salad combines chicken and grapes with walnuts, herbs and a light lemon dressing. A flavorful salad made with just a few simple ingredients and minimal preparation.

Add a little cheese for more heft and flavor. This easy chicken salad is very flexible and can be served with pasta or soup for a simple and easy meal.

You will need 5 ingredients:

- Chicken
- Green or Red Grapes
- Walnuts
- Fresh or Dried Tarragon
- Fresh Lemon Juice


Make Ahead for this Salad:

- 2 cups of cubed cooked chicken

Ingredients:

2 cups of cubed cooked chicken

1 cup grapes sliced in half (green or red)

1/2 cup chopped walnuts

1/4 tsp dried tarragon or 1 tbsp fresh

Lemon juice to taste

Combine all ingredients in a bowl and allow the salad to marinate for at least one-half to one hour.

** Serve this quick chicken salad scooped into raw radicchio leaf cups or cabbage leaf cups with a side of sweet potato chips.

* Instead of Grapes:
Apples - 1 cup sliced or
Mandarin Oranges - 1 cup cut into chunks or
Pears - 1 cup diced (the pear can be slightly hard to add a nice crunch to the salad)

Pecans - 1/2 cup chopped or
Hazelnuts - 1/2 cup chopped or
Sunflower Seeds - 1/2 cup


* Instead of Dried Tarragon:
Rosemary - 1/4 tsp or to taste or

Thyme - 1/4 tsp or to taste.


Get fresh herbs if you can. The taste is so much fresher and potent and will bring out the flavors of the chicken and the fruit. Start with a tablespoon of fresh and adjust to taste.

Lime Juice - to taste or
Greek Yogurt - 1/2 cup or to desired moistness or
Sour Cream - 1/2 cup or to desired moistness
