- Chicken
- Broccoli
- Sweet Red Peppers
- Cashews
- Soy Sauce or Tamari
- Fresh Squeezed Lime Juice and Zest
Make Ahead for this Salad:
- If you are cooking your own chicken, prepare as desired and cube 3 cups

Ingredients:
* cooked chicken – 3 cups cubed (you may use grilled, barbecued or baked chicken for this recipe)
fresh or frozen broccoli – 1 cup cut into bite size pieces (if using fresh broccoli – wash, cut up and steam briefly) (if using frozen broccoli – thaw, drain and cut up)
sweet red peppers – 1/2 cup cut into medium dice
cashews – 1/2 cup roughly chopped
soy sauce or tamari soy sauce – 1 tbsp
fresh squeezed lime juice – 1 tbsp
lime zest – as desired (use the same lime for the juice and zest)
* Vegetarian Option: Instead of chicken, substitute grilled thick cut tofu slices or use store bought seasoned tofu.

1. In a mixing bowl, combine all the ingredients and toss well.
2. Adjust the soy sauce and lime to your own taste.
3. Allow salad to marinate for at least a half an hour in the refrigerator before serving.
