Carrot Salad Recipe:

Carrots are such a versatile vegetable because of their sweetness and crunchiness. Used in salads, soups, stews and even desserts, they are good in so many ways. Containing carotene, which gives it its orange color, and an abundance of fiber, minerals and antioxidants, they are a healthy addition to any dish.

You will need 5 ingredients:

- Carrots
- Capers
- Watercress
- Walnuts
- Honey Mustard

Ingredients:

carrots – 2 cups diced

capers – 1/4 cup

watercress – 3 cups washed, dried and coarsely chopped

walnuts – 1/4 chopped

honey mustard – 1/2 cup

1. In a mixing bowl, combine the carrots, capers, watercress and walnuts.

2. Add the mustard and toss carrot salad to combine.

Quick Tip: It may be easier to combine the salad ingredients with
your hands to make sure the mustard is evenly distributed.


If you prefer it a little moister, just add a little of the caper juice until you reach the desired consistency.
