Corn Salsa




Our Black Bean and Corn Salsa uses your favorite salsa and dresses it up with some simple ingredients so you can have a great tasting salsa ready in minutes.

Try serving this easy salsa recipe as a flavorful cocktail sauce and make a delicious seafood cocktail in minutes.

Yield: Approximately 5 cups



You will need 4 ingredients:

- Canned Black Beans
- Corn Kernels (frozen)
(thaw and drain ahead of time)
- Bottled Salsa of Choice
- Avocado

Ingredients:

canned black beans – 1 (15 oz can)
(rinse and drain beans before using)

frozen corn kernels – 1 cup
(thaw and drain ahead of time)

bottled salsa – 1 cup
(choose your favorite brand)

avocado – (1) medium
(cut in half, remove stone and dice)

In a mixing bowl, combine all the ingredients and allow to marinate in the refrigerator for at least an hour.

Black Bean Corn Salsa - Serving Suggestions:

Seafood Cocktail:

** This black bean corn salsa makes a great seafood cocktail sauce.

In a glass, you can use martini, wine or your favorite clear glasses, layer salsa on bottom, then cold, cooked and cubed seafood of choice, then another layer of salsa. Squeeze a little fresh lime juice over the cocktail and place a dollop of sour cream on top.

Meal Idea:

** Serve this easy salsa recipe over a bed of warm basmati rice with a side of your favorite steamed vegetables.

Wrap Sandwich:

** Scoop our black bean and corn salsa into a soft tortilla shell (either plain or flavored), add some shredded low-fat or fat-free cheese of your own choosing, top with a little sour cream (low-fat or fat-free) and fold together. Serve with baked sweet potato chips and you have a delicious quick lunch idea.
