Basmati Rice Salad Recipe:

A nice blend of taste and texture creates this quick rice salad. Flavorful basmati rice, sweet crunchy carrots, olives and a citrus soy dressing make this delicious and easy rice salad recipe.

The easy menu planner will give you a variety of ideas for quick meals.

3-4 servings


You will need 5 ingredients:

- Basmati Rice
- Shredded Carrots
- Black Olives
- Ponzu Soy Sauce
- Dried Thyme



Make Ahead for this Salad:

- Prepare rice according to package directions and
measure out 3 cups

Quick Tip:
When cooking rice, extra flavor
can be added to the rice by substituting
beef, chicken or vegetable stock
for the water.

Ingredients:

basmati rice – 3 cups cooked
(prepare according to package directions)
(substituting beef, chicken or vegetable stock
for the cooking water will add extra flavor to this salad recipe)

shredded carrots – 1 cup
(use store bought shredded carrots to save time)

black olives – 1/4 cup chopped

ponzu sauce – 1 tbsp or to taste
(ponzu sauce is a citrus accented soy sauce
available in most grocery stores in the ethnic aisle)
(you may use regular soy sauce if you prefer)

dried thyme – 1/4 tsp
(rub thyme in the palm of your hand before adding to salad to
release the flavor of the thyme into the salad)

1. In a mixing bowl, combine all the salad ingredients and toss well to combine.

2. Allow salad to marinate for a half hour or so before serving.
