Barbecued Chicken Salad

This is one of the easiest chicken salads. and with only four ingredients, it's a breeze to make any time.
It tastes so good with so little effort.

This salad is also a great chicken salad sandwich filling, as well. Make quick and easy meals using the menu planner below. The ingredient exchanges and simple additions will add even greater variety to this quick salad recipe.

We've also included a simple and flavorful vegetarian option for this barbecued chicken salad that anyone would enjoy.

3-4 servings



You will need 4 ingredients:

- Barbecued Chicken
- Red Onion
- Walnuts
- Mayonnaise




Make Ahead for this Salad:

- If preparing your own chicken, make ahead of time
and cube three cups

Ingredients:

* barbecued chicken – 3 cups cubed

red onion – 1/2 cup sliced in thin half-moons

walnuts – 1/2 cup chopped

mayonnaise – 1/2 to 3/4 cup or to desired moistness

Vegetarian Option: Substitute steamed or sauteed tempeh or pre-packaged seasoned tofu for the chicken. You can also use a combination of 1 1/2 cups each of tempeh and zucchini or yellow squash or the same combination using the seasoned tofu.

In a mixing bowl, combine all the ingredients, adjusting the mayonnaise to desired moistness.
