Baked Potato Salad Recipe:


This quick potato salad recipe combines rich, smoky and creamy flavors to create a great salad that's
good any time of the year.

Red potatoes, crispy bacon, roasted peppers and flavorful cheese come together in a blending of great tastes you will enjoy. Easy and quick to prepare, you will want to make this quick potato salad often. It is a meal all by itself but can also work as a great side to any entrée.

You will need 8 ingredients:

- Red Potatoes
- Green Onions
- Celery
- Bottled Roasted Red Peppers
- *Bacon (regular or turkey)
- *Sour Cream
- *Yogurt
- *Cheddar Cheese

Make Ahead for this salad:

- (6-8)Red Potatoes baked and cooled.

- 2 slices of bacon cooked until crispy.

Ingredients:

6-8 red potatoes – baked and cooled

green onions – 1/2 cup chopped

celery – 1/2 cup diced

bottled roasted red peppers – 1/2 cup cut into medium sized pieces

*bacon – 2 sliced cooked crispy and crumbled

*sour cream – 1/2 cup

*yogurt – 1/2 cup

*shredded cheddar cheese – 1 cup

*Quick Tip:
The amount of fat can be lowered by choosing substitutions for the ingredients above. For the bacon: choose turkey bacon instead. For the sour cream, yogurt and cheese: choose low-fat or no fat varieties for each ingredient.

1. Take the baked and cooled potatoes and cut into 1-inch cubes, leaving the skin on.

2. In a large bowl, combine the potatoes, onions, celery, peppers and bacon. Toss gently, taking care not to break down the potato pieces.

3. In another bowl, mix the sour cream and yogurt together.

4. Add the sour cream mixture and the cheese to the bowl of potatoes and vegetables and combine to evenly distribute all the ingredients. Salt and pepper to taste. Chill in refrigerator until ready to serve.
