Asian Salad

These easy Asian Salad Recipes are simple to prepare and are a great solution for quick meal ideas. Each of these quick salads will make approximately two servings.

Use the easy serving ideas for each salad to make quick meals anytime.

Quick Asian Salad

1 cup diced cucumber (use pickling cucumbers or seedless cucumbers)
1 cup diced red bell pepper
1 cup thinly sliced baby bella mushrooms
1/2 cup roughly chopped fresh cilantro
1 tbsp olive oil
1 tbsp seasoned rice vinegar (or to taste)

- Combine all ingredients, toss well and allow salad to marinate for an hour in the refrigerator, tossing occasionally.

Quick Meal Ideas:

Salad and Seafood:

* Serve this quick salad over baked or broiled fish, such as halibut, sole or salmon.

Quick Pasta Meal:

* Toss this simple salad with cooked pasta such as farfalle, elbow, shell or penne. Add a little fresh grated parmesan cheese over top. Serve with warm garlic bread.

Lettuce Cups:

* Spoon into Bibb lettuce leaves and top with a little goat cheese. Serve with a side of your favorite chips, whole grain crackers or breadsticks.

Optional Additions:

* Add cubed cooked grilled chicken, or smoked salmon or cubed cooked ham.



Asian Salad with Almonds

1 cup packaged shredded carrots
1 cup diced button mushrooms
1 cup thinly sliced celery
1/2 cup sliced almonds
1/4 cup diced scallions
tamari soy sauce - to taste

- Combine the vegetables and almonds in a bowl.

- Drizzle on the tamari to taste and toss well to combine.

Quick Meal Ideas:

Quick Pasta Meal:

* Serve this simple Asian salad over a bed of warm rice noodles or udon noodles. Sprinkle with some sesame seeds if desired. Add a bowl of soup, like miso soup, for a quick and easy meal.

Salad Meal:

* Serve salad over mixed salad greens and serve along with rye crackers topped with a soft cheese spread and thin slices of tomato and avocado.

Optional Additions:

* Add roughly chopped fresh basil.

* Add some toasted sunflower kernels for some nice crunch along with sliced water chestnuts.

* You could also add cubed smoked tofu.



Mandarin Asian Salad with Ramen Noodles

1 package oriental ramen noodle soup
1 1/2 cups shredded red cabbage
1/2 cup canned, drained mandarin oranges (reserve liquid)
1 tsp grated fresh ginger
1-2 tbsp toasted sesame oil

- Prepare noodles as directed on package and drain.

- Place noodles in a bowl with cabbage, oranges, ginger, sesame oil and soup seasoning packet.

- Add one tablespoon (or to taste) of the reserved juice from the oranges and toss to combine completely.

Quick Meal Ideas:

Quick Pasta Meal:

* Serve this easy noodle salad along with a side of canned salmon, peas and scallions tossed with a little lemon juice and lemon zest.

Salad Meal:

* Serve salad on a bed of baby spinach leaves and serve along with warm rolls.

Stuffed Mushrooms:

* Another quick meal idea is to serve this simple Asian salad mounded on top of large, grilled portobello mushrooms.

Optional Additions:

* Add some roasted red pepper strips, chopped peanuts or cashews or cooked shrimp.

* You could also add some chopped fresh parsley, cilantro or basil.



Light Asian Salad

4 cups mixed salad greens
1 cup shelled, cooked edamame (green soybeans)*
3/4 cup diced cucumber
1/2 cup sliced water chestnuts
1/4 cup cashew pieces
seasoned rice vinegar (to taste)

* Shelled edamame are available in the freezer section and take about five minutes to cook.

- In a bowl, combine the greens, edamame, cucumber, water chestnuts and cashew pieces.

- Drizzle the rice vinegar over the salad ingredients and toss well. Taste and adjust vinegar as needed.

Quick Meal Ideas:

Quick Meal:

* This is a light, fresh salad and goes well with a bowl of steamed or boiled rice seasoned with a little soy sauce and lime juice.

Light Salad Meal:

* Serve this simple salad along with cold, cooked potatoes that have been cubed and tossed with a little olive oil and lemon juice. Add a tall glass of iced green tea too.

Chicken:

* Another quick meal can be made by serving this light salad with grilled chicken and steamed spinach.
